Champagne Devaux ies just east of the beautiful medieval city of Troyes down in the lesser known area of Champagne called the Aube. Often referred to as the "hidden vineyards" of Champagne, the Aube is responsible for producing around 50% of the Pinot Noir used in the whole of the Champagne area. Champagne Devaux, unusually for Champagne producers, has access to around 1400 hectares of its own vineyards which allows much more stringent quality control of the grapes that go into Devaux. As the Aube, or to be more specific the Cote des Bar is real Pinot Noir country Devaux Champagnes are dominated by this elegant grape.
The Ultra D is 66% Pinot Noir and 34% Chardonnay and is "ultra brut" in style which means a much lower sugar content than other champagnes. This gives an excellent aperitif champagne which also marries well with food.
